Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
Servings: 4 servings

Ingredients

  • Frozen mango chunks (2 cups): For natural sweetness, thickness, and that frosty texture.
  • Coconut milk (1 to 1 1/4 cups): Use full-fat for creaminess or light for fewer calories.
  • Banana (1 small, ripe): Adds body and extra sweetness; optional but recommended.
  • Lime juice (1 to 2 teaspoons): Brightens the flavors and balances the richness.
  • Honey or maple syrup (1 to 2 teaspoons): Optional, only if you want it sweeter.
  • Vanilla extract (1/2 teaspoon): Rounds out the flavor with a soft, dessert-like note.
  • Pinch of salt: Enhances sweetness and overall flavor.
  • Optional add-ins: Greek yogurt (1/4 to 1/2 cup) for protein and extra tang.
  • Chia seeds or ground flax (1 tablespoon) for fiber and omega-3s.
  • Fresh ginger (1/2 teaspoon, grated) for a zesty kick.
  • Spinach (1 cup) for a nutrient boost; it won’t overpower the taste.
  • Ice (a few cubes) if using fresh mango instead of frozen.

Method

  1. Prep your blender: Add the coconut milk first so the blades catch easily.
  2. Layer the fruit: Add frozen mango and the banana on top of the liquid.
  3. Flavor it: Add lime juice, vanilla extract, a pinch of salt, and any optional add-ins.
  4. Blend until smooth: Start low, then move to high for 30–60 seconds until creamy. Scrape the sides if needed.
  5. Taste and adjust: If it’s too thick, add a splash more coconut milk. If you want it sweeter, blend in a little honey or maple.
  6. Serve immediately: Pour into a chilled glass. Top with toasted coconut flakes or a squeeze of lime if you like.
