Ingredients
  

  • 2 cups frozen pineapple chunks (unsweetened)
  • 1 cup canned coconut milk (light or full-fat, depending on desired creaminess)
  • 1/2 cup coconut water or cold water (adjust to thin if needed)
  • 1 small ripe banana (optional, for extra creaminess and sweetness)
  • 1–2 teaspoons fresh lime juice
  • 1–2 teaspoons honey or maple syrup (optional, to taste)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of sea salt (optional, enhances flavor)
  • Ice cubes (optional, only if you prefer a frostier texture)

Method
 

  1. Add liquids first: Pour coconut milk and coconut water into the blender. Starting with liquids helps the blades catch and blend smoothly.
  2. Layer the fruit: Add frozen pineapple and banana (if using). Toss in lime juice, sweetener, vanilla, and a pinch of salt.
  3. Blend until silky: Start on low, then increase to high. Blend 30–60 seconds until thick and creamy. If it’s too thick, add a splash more water.
  4. Taste and tweak: Add more lime for brightness, more sweetener if needed, or a few ice cubes for extra chill. Blend again briefly.
  5. Serve right away: Pour into cold glasses. Garnish with a pineapple wedge or toasted coconut flakes if you like.
